Finally, we're at the end of salt. I must say that this chapter was better than the last two. At least I can relate to food . I'm addicted to cheese so, it wasn't too bad. Learning the process of making ham could have been done with out. This chapter was a nice way to end part one.
I was surprised by the tedious process to takes to make ham. I thought you just throw a little bit of salt on it. It needs special care so that it doesn't become rotten and gross. I wouldn't have thought they laid the ham East to West to use the wind from Parma. I mean they had an efficient system in the seventh and eighth centuries. I would think the ham could have caused a few deaths in its time , but the people used a good motto. "If it smells bad don't eat it!".
Lets talk about cheese. What's the difference between fresh cheese and old cheese? You guessed it, salt. I've had ricotta cheese it isn't that appetizing. I just keep thinking spoiled milk and it makes me want to throw up. It seems like salt is an ingredient to life. Milk plus salt equals cheese. I couldn't imagine of the Chinese didn't establish salt. It was interesting to learn the origin of Parmesan cheese. The Romans have simple naming systems.
Salt vocabulary: Salomi derived from salt. What doesn't salt have an impact on. Back in the day salt was the new sheriff in town.

I agree that they did take a really long time to make ham! They must have really really liked it, I don't think I like ham enough to go through such a tedious process.
Haha, I also liked the motto of "if it smells bad don't eat it!", like when they stuck the knife in the ham and then smelled it. Weird...but helpful I suppose.
I think we should go with their old motto that Brooke mentioned. Why don't we do that anymore? Seriously. If it smells bad, we still eat it! Example: school lunches.
I totally agree; I can always realte to food. I never thought that it took so long for ham. I would have been to impatient. I think that moldy cheese is the most disgusting thing in the world. Salt and Milk are quite tasty seperated, but they are amazing together. I love cheese. I guess salt can do anything.
I'm so excited that we are at the end! I'm sick of this food. A lot of it I really don't care for such as ham and cheese. Both make me throw up. I really don't know why. It could be the salt. Old cheese is French cheese by the way. The French like nasty old ucky cheese. Don't eat French cheese. You will hate it.
Cheese is awesome. There was a lot of this chapter that was dedicated to it. Before reading, I never knew how much salt was needed to make cheese.
I guess Ham can turn green if it isn't cured right. Ewwww. Also the Cheese Master sticks his hands inside the cheese to know when it is done? Makes me happy we have food inspectors today.

I thought it was cool that Parmesan cheese comes from Parma Italy. I love to use it on pasta! I totally agree with your opnion on ricotta. It's disgusting!

When I was in China in 2002, we NEVER saw cheese anywhere. EVER! It led me to wonder as to why? We never saw any dairy farms. I guess the Chinese don't care for it much? It seems that is true even to this day?
